Parsley potatoes are a super easy side dish, and this may become your favorite way of serving potatoes.

The best potato recipes are the simplest. This one has only 5 ingredients that really enhance the taste of potatoes and you don’t even have to peel them.

My love of potatoes is deep and has everything to do with my Ukrainian heritage. Some of our most popular recipes include creamy mashed potatoes, crispy roasted red potatoes, and let’s not forget the potato soup. If you are a fan of potatoes, a surprise awaits you with these parsley potatoes!

Potatoes worthy of the company

I call them “Company Potatoes” because this is the potato recipe you make when you want to amaze your guests.

My sister-in-law, Nadia, shared this Yukon potato recipe (her husband’s favorite way to eat potatoes) with us and our family devoured it with compliments all over. My parents agreed that these are the potatoes we will make when our relatives come to town this weekend.

Parsley Potato Recipe

  • Potatoes – Yukon gold potatoes or red potatoes work well. We use 5 pounds to feed a crowd, but you can easily cut the recipe in half for a smaller family.
  • salt – to boil potatoes and season afterwards. We use fine sea salt.
  • bay leafoptional but it gives the potatoes more flavor
  • Butter – we use a generous amount (3/4 cup) of unsalted melted butter
  • Parsley – 1 bunch looks like a ton (1 cup chopped), but it really makes the potatoes shine.

How to make parsley potatoes

1. Rub the potatoes – use a clean sponge or the rough back of a sponge (it is not necessary to peel them). Cut into 1 – 1 1/2 ″ thick pieces, transfer to a 5.5 Qt pot and add enough hot water to barely cover the potatoes. Sprinkle with 2 teaspoons of salt and add the bay leaf (if used).

2. Boil until tender – Bring to a boil then lower the heat and cook over a low boil partially covered for about 15 minutes or until easily pierced with a fork. Drain well, drizzle with melted butter and stir gently to coat.

3. Potatoes in season – Sprinkle with 1/2 teaspoon of salt or to taste. Add 1 cup of chopped parsley and toss to combine. Stir again just before serving to coat with the butter that has accumulated on the bottom.

Professional tip: It’s easier to toss in a big bowl – you’ll look like one of those awesome pizza pie throwers except its potatoes which can be just as fresh in some circles 😉

How long to cook the potatoes?

This can vary based on the size and variety of the potatoes, but with yukon and red potatoes, once the water is back to a boil, you should continue to simmer for 15 minutes.

How do you know when the potatoes are cooked?

Cook the potatoes until they pierce easily with a fork or butter knife. Avoid overcooking the potatoes or they can become mushy and moldy. They shouldn’t fall apart or crumble.

Can i substitute parsley?

A great substitute for parsley is fresh dill. Finely chop the dill and add to taste.

Can i use dried herbs?

Dried herbs should be added during cooking as they take time to rehydrate and soften. Since the herbs here are added at the end, the dried herbs will not work. Fresh herbs will also give you the best flavor.
